Description

Chlorogenic Acid Is A Cinnamic Acid Derivative Which, By Oxidation, Forms What Is Called A Dark Plant Pigment. Its Particular Function To Plants Is Largely Unknown But Has An Apparent Effect On The Palatability Of Several Foods. In Some Instances Chlorogenic Acid Appears To Affect The Plant's Ability To Fight Pathogens. For Example, Bruised Apples Lose Chlorogenic Acid Content As Well As Flavor. Chlorogenic Acid Was Identified As An Allergen In Plant Materials Causing Human Atopic Disease By In A Report Published In November, 1962. "the Fact That An Immediate Skin Reaction Can Be Produced By A Compound Of Low Molecular Weight Would Suggest That Chlorogenic Acid Acts As A Hapten In The Human Skin Or Mucous Membranes.
